Tomato Mozarella Salad

Serves 1 and makes a great quick lunch with great flavor
Ate this at St. Louis Bread Company about 3 summers ago and had to try to make my own version... I love it. You can add things as you wish... and sometimes I throw fresh basil and spinach leaves into it as well. I like it when I am "sick" of regular salad. It peps up the routine!
Ingredients
- 1 cup of grape tomatoes - sliced in half so they get juicey (or slice up 3 Roma sized tomatoes
- 3 sticks of low-fat mozarella string cheese diced into small pieces.
- 1 TBS of extra virgin olive oil
- basil to taste
- oregano to taste
- garlic powder to taste
- salt and pepper
Directions:
1. chop up the tomatoes and cheese and toss into a bowl.
2. whisk together the oil with the spices. Feel free to experiment with other spices that appeal to you.
3. Drizzle the spiced oil onto the cheese and tomatoes and toss lightly.
4. ENJOY!
