Watermelon Summertime Salad
Recipe from: Gretchen Jameson, adapted from Kristy Storm. A PERFECT summer salad, and a great pairing with grilled meat. Refreshing and tasty!
Ingredients
- 2.5lb watermelon cut into bite-friendly pieces
- 6oz. arugula
- 8oz. baby field greens
- Thinly sliced red onion
- 3/4 c feta (or gorgonzola)
- 1 cup macadamia nuts (carmelize with 1/4 c. butter and 1/4 . brown sugar, set aside)
- 1/4 c. seedless raspberry jam
- 1/4 c. cranberry juice cocktail
- 2 T. balsamic vinegar
- 2 T. white balsamic vinegar
- 4 T. EVOO
- 2 T. vegetable oil
- Mint leaves
- Salt and pepper to taste
Directions:
1. Puree the raspberry jam, cranberry juice, and balsamic/white balsamic vinegar. Slowly add oils and blend. Chop mint leaves (handful) and add to dressing, puree. Set aside.
2. Carmelize nuts and set aside
3. Toss arugula and field greens with vinegarette. Layer with red onions, watermelon, feta, and top with carmelized nuts.

Tonight, I prepared this using cranberry-raspberry juice, and I only had seedless blackberry jam -- it was actually DELICIOUS and cut the tang of the balsamic even better!
