Sugar Dream Cookies
by Gretchen Jameson
A new take on traditional cut-out sugar cookies.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup cooking oil
- 1 cup powdered sugar
- 1/2 cup granulated sugar
- 3/4 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 3/4 teaspoon vanilla
- 2 1/2 cups all-pupose flour
- 1/3 cup granulated sugar, coarse crystal sugar or colored sugar
1. Beat butter for 30 seconds. Gradually add the cooking oil, beating on low speed until well combined and scraping sides of bowl. Add the powdered sugar, 1/2 cup granulated sugar, baking soda, cream of tartar and salt. Beat until combined. Beat in egg and vanilla. Beat in as much of the all-purpose flour as you can with the mixer. Stir in any remaining flour.
2. Shape the cookie dough into 1-inch balls. Roll in granulated or coarse sugar. Place the sugar coated balls 3 inches apart on ungreased cookie sheets. Using the bottom of a glass dipped in sugar, flatten the balls to form 2 1/2-inch rounds.
3. Bake in a 350 degree oven for about 9 minutes or until the tops of the cookies are slightly cracked and the edges are set (do not let edges brown). Transfer to wire racks and let cool.
Makes about 48 cookies.
