Stuffed Tenderloin Filets
Recipe from: One of Gretchen's favorites for a dinner party. This recipe comes from the White Gull Inn in Fish Creek in Door County, WI
Ingredients
- 1/2 tablespoon butter
- 1 teaspoon dried thyme leaves
- 1 cup chopped green onion
- 1/2 cup sliced shiitake mushrooms
- 1/2 cup shredded smoked Cheddar cheese
- 2 tenderloin filets (about 6-8 ounces each)
- 2 strips smoked bacon
Directions:
- Preheat oven to 350
- In a medium frying pan, melt butter over medium-high heat. Saute thyme, onions and mushrooms until soft, approximately 3 minutes. Remove from heat; add Cheddar cheese and set aside to cool.
- Make a hortizontal slit in each filet, working knife around to create a deep pocket. Stuff onion mixture into each filet. Wrap filets with bacon and secure with toothpicks. Insert meat thermometer and bake filets until desired degree of doneness. Serve immediately.
