Lentil Tacos
These extremely healthy tacos are ALSO extremely easy to make and extremely tasty! Leon and I really enjoy them.
Ingredients
- 1 tsp olive oil
- 1 cup minced onions
- 1/2 cup minced celery
- 1 cup red lentils
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 2 cups vegetable stock
- 1 cup salsa
- 8 whole wheat tacos
Toppings
- Shredded greens
- Chopped Tomatoes
- Mexican White Cheese
In large frying pan over medium heat, add the olive oil and saute onions, celery, and garlic for 5 minutes. Stir in lentils, chili powder, cumin and oregano. Cook for 1 minute. Add the stock. Cover and cook for 20 minutes, or until lentils are tender. Remove the lid and cook, stirring often, until the lentils are thickened, about 10 minutes. Add salsa. Wrap tortillas in damp paper towel and microwave on high for 1 minute. Fill tortillas with mixture and toppings. Serve.**
