This recipe was a huge hit last summer out by the pool. It's SO easy it's almost a crime; and SO good on scoop chips or blue corn chips!
Ingredients:
1 can (14.5 oz.) Black Beans (rinsed)
1 cup cooked corn kernels (I buy a can of corn... Green Giant Niblets are my favorite)
1/4 cup fresh tomato salsa (of your level of spiciness)
2 scalions chopped
1 garlic clove minced
2 TBSP of lime juice
1 TBSP of olive oil
Chopped cilantro (as much as you prefer)
Directions:
Combine all of the above in a medium sized bowl and serve with your favorite chips. YUM!
