City Chicken

Old Fashioned City Chicken

 

Recipe handed down from mom (grandma) Staude. Submitted by Kathleen Nichols. This was an annual tradition for Christmas Day or New Years Day dinner, and we've continued the tradition.

 

Ingredients

  • 1-1/2 lbs. pork, cut up in small chunks (chop suey meat works great)
  • 1-1/2 lbs. veal, cut up in small chunks
  • 1/2 cup flour
  • 1 tablespoon garlic herb seasoning (from Sam's Club; or substitute Garlic powder)
  • 1 teaspoon salt
  • pepper to taste
  • cooking oil

 

Alternate pork and veal on skewers to make your "drumstick". Roll in seasoned flour mixture. Brown in hot oil. Simmer on low in approximately 1/4-inch of water in lidded pan for approximately one hour. If water boils out, add a little more.

 

NOTE: Or - cook in pressure cooker for 10 minutes at 10 lbs. pressure. Or - cook in crock pot for 7 to 8 hours on low.
