Buttermilk Scones

Buttermilk Scone Wedges

These are quick and easy to make in the morning and go GREAT with clotted cream!

Ingredients

 

  • 2 cups flour
  • 1/3 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 tbsp unsalted butter, chilled and cubed
  • 2 tbsp chilled shortening
  • 1/2 cup buttermilk (you don't have to buy a whole carton anymore! They come in little 1-2 cup servings!)
  • 1 egg
  • 1.5 tsp vanilla
  • 1/2 cup dried fruit (I use craisins) or mini chocolate chips

 

1. Preheat oven to 400 degrees. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Cut in the butter and shortening until the mixture resembles coarse crumbs.

2. In a separate bowl, mix together the buttermilk, egg and vanilla. Make a well in the dry ingredients and pour the liquid ingredients in the well and blend together.

3. Stir in the dried fruit or mini chocolate chips.

4. Flour your hands and pat the dough into an 8-inch circle on an ungreased or silpat-lined baking sheet.

5. Cut into 8 wedges (This is where a professional pizza cutter comes in really handy) and bake for 20-30 minutes or until a toothpick comes out clean.

6. Cool on a wire rack.

 

SERVE WITH JAM AND CLOTTED CREAM!!! Enjoy!

We are a pretty rockin group of people! These family recipes are slammin! I think we need to open that restaurant!
