Breakfast Casserole
Great make-ahead breakfast dish for company - delicious served with fruit and muffins or sweet breads.
6 eggs (beaten)
2 slices of bread (broken up)
1 teaspoon dry mustard
1 teaspoon salt
1/2 cup diced onions
1-1/2 cus of sharp cheddar cheese (shredded)
2 cups of milk
1 pound of ham (chopped) OR 1 pound of sausage (browned)
8 oz. can mushrooms (optional)
Brown the sausage (or chop the ham); beat the eggs; mix in all other ingredients and pour into a 9X13 pan. Refrigerate over night. Bake at 375 degrees for 45 minutes.
