Boiled Dinner

 

For a variation, use corned beef instead of the ham and omit the green beans, turnips, and parsnips. Submitted by Kathleen Nichols.

 

Ingredients

 

  • 2-1/2 to 3 lb. ham (on bone)
  • 1 bay leaf
  • 1 tablespoon peppercorns
  • 1 medium onion

 

Cover with water and simmer for 1 hour and 15 minutes. Skim off fat.

 

ADD:

  • 6 medium carrots
  • 3 to 6 potatoes, cut in half
  • medium head of cabbage, cut in quarters
  • 3 turnips
  • 4 medium parsnips
  • 1 clove garlic (optional)
  • green beans (optional)

 

Simmer for 30 minutes or until meat and vegetables test done, (are fork tender).
