Boiled Dinner
For a variation, use corned beef instead of the ham and omit the green beans, turnips, and parsnips. Submitted by Kathleen Nichols.
Ingredients
- 2-1/2 to 3 lb. ham (on bone)
- 1 bay leaf
- 1 tablespoon peppercorns
- 1 medium onion
Cover with water and simmer for 1 hour and 15 minutes. Skim off fat.
ADD:
- 6 medium carrots
- 3 to 6 potatoes, cut in half
- medium head of cabbage, cut in quarters
- 3 turnips
- 4 medium parsnips
- 1 clove garlic (optional)
- green beans (optional)
Simmer for 30 minutes or until meat and vegetables test done, (are fork tender).
